X-MAS-TRADITIONAL FRUIT MIXING CEREMONY - 2015

HO! HO! HO!-XMAS IS NEAR----it's CAI'S FRUIT CAKE MIXING CEREMONY AGAIN!

 

Ho…Ho….Ho… once again the Christmas and the New Year season is on. As it was the time to welcome the moment we at Culinary Academy of India began the celebrations with the Traditional Fruit Mixing Ceremony on 24th December, 2015. This time it was really a special moment as we had Chief Guest, SperoChapley -Founder of Youthinc, Director of Commercial Retail Group, Guest of Honour, Stacey Nelan -Recreation and Sports Officer, Adelaide City Council, VVIP, Siobhan Mullins -Regional Manager, Hotel Industry, Australian Liesure & Hospitality, Special invitee, Rajini Vasan -Chief Executive – Eye Play Sport, Member – South Australia India Advisory Council, Chef Akshay Kulkarni, Head of Department of CAI & also around 20 delegates of Team Youthinc, a charity fund raiser from Australia along with Faculty & staff of CAI as a part of our celebration. The media was also present to capture this overwhelming & fun filled event. Dry fruits & nuts like Orange peel, Walnuts, Cashewnuts, Glazed cherries, Sultanas, Raisins, Black Currants, etc. which weigh around 150kg all together we CUT IT…., then it was time to SPICE IT….with some traditional spices like Cinnamon, Cardamom, Ginger, etc & we all put our hands together to MIX IT….. & finally SOAK IT….with wine, which was actually the theme of the event & also the traditional way. Over the period of month the fruits get macerated with the flavours & moistness infused into them with the spices & liquor that was added into it. Then those soft & tender fruits are transformed into 500 delicious Christmas cakes that are packed & gifted to our well-wishers & hoteliers across the city. A small gesture as we are here because of their continuous support, guidance and encouragement.
