Culinary Academy of India, Hyderabad have recently participated in SICC – SOUTH INDIAN CULINARY CHALLENGE, which was organized, endorsed and supported by SICA (South India Culinary Association) – A proud member of Indian Federation of Culinary Association (IFCA) and World Association of Chefs Societies (WACS), alongside Food Hospitality World(FHW). It was a 3 day event (9th August 2017 to 11th August 2017) held in White Orchid Convention Centre, Hebbal, Bengaluru. The competition categories were 3 Tier Wedding Cake, Artistic Pastry Showpiece, Artistic Bakery Showpiece, Fruit and Vegetable Carving for Culinary Professionals & Catering College Students. We have participated in the ARTISTIC PASTRY SHOWPIECE CATEGORY for Professionals and we have won GOLD MEDAL for this category. Our showpiece was a sculpture carved out of 120kg solid block of dark chocolate which was sculpted into a lady which we named it as GRACEFUL. The sculpture portrays the soul and elegance in the raw form depicting her natural beauty in the utmost graceful manner. The block of chocolate was chiseled meticulously by using engraving tools and very fine carving tools to reveal the intricate features of a human figure. At the end the showpiece was almost weighing upto 80kgs after it has been sculpted. The whole Pastry team along with budding chefs of final year worked for a weeks time to finish this Graceful showpiece under the expert guidance. The hard work, the skills that went into making it & the challenge of moving the showpiece to the venue on time, all together have worked for us and CAI yet again has emerged as a winner in a National Level Competition.
