Azadi Ka Amrit Mahotsav -India on Thali- Christmas Gala Buffet celebration - 2022

The festive season is commenced and it is that time of the year when the Hospitality Industry witnesses a splurge of Christmas celebrations all over the world. Fruit Mixing Ceremonies, Gala Buffet, Christmas cakes and Puddings, Santa Claus, Roast Turkey marks the usual celebrations.

At Brand CAI, we decided to do it a little Hatt Ke! Something Unusual, Something Desi, Something Bigger but of course Something with Food AS ‘if it is food, then it has to be Brand CAI’.

As part of the Azaadi ka Amrit Mahotsav Celebrations, the 75 Years of our Independence, We thought that having the theme INDIA ON A THALI will be just apt for this year Christmas Gala Buffet. So presenting to you the MAHA BHOJAN – 2022 where we have displayed more than 500 varieties of our Indian culinary heritage food of the various states on a Giant three dimensional India Map measuring 28 feet. The food has been presented in  various Indian display utensils which are a part of our culture viz. Brass, Copper, Silver, EPNS, Stoneware, Stainless steel, Melamine, Aluminum, Wood, Cane, Coconut shells, Metal, etc .  All the food is cooked by our final and Second year students who hail from all various regions of India. We have even involved the Brand parents /Parents of a few students to ensure the authenticity of the food being cooked. The preparation of the theme commenced almost a month back as we had to source out local ingredients from all these places of India. The menu has been meticulously planned to portray the most common and popular dishes of these regions.

We have even made an exclusive and different Christmas tree using the utensils used for cooking. Being a chef training school par excellence the theme was to celebrate the joy of cooking food.  We have created a never seen before Christmas tree with cooking pans which will jingle all the way. 

Mr.L Ramana, MLC kindly consented to be the chief guest for the occasion. All the prominent hospitality professionals of Hyderabad were invited to grace the occasion.
