The Joy of Christmas Plum Cake: A Mammoth 1000 X’mas cakes made by the budding Chefs of Brand CAI



Christmas is a season of celebration, family gatherings, and, of course, indulgent treats. One of the most beloved festive delights is the traditional Christmas plum cake—rich, moist, and full of fruity, spiced goodness. But imagine preparing 1,000 cakes of this beloved cake, a Herculean effort involving 100 kg of soaked fruits, rum, mixed spices, and the collaborative effort of the final year students working in shifts to bring this culinary challenge to life. This ambitious project is not just about baking a cake; it’s a testament to teamwork, planning, and a deep love for the holiday spirit.

The Scale of the Task: 1,000 numbers of Plum Cake

Making 1,000 plum cakes- approximately 400kgs is no small feat. It requires meticulous planning, careful ingredient measurement, and a lot of hands on deck. This particular project was a community effort, where all the final year students took on the responsibility of crafting these cakes in shifts, working tirelessly to meet the colossal demand.

Here’s a peek into how the students worked together to bring this grand vision to life:

1. Soaking the Fruits The sheer quantity of ingredients involved is mind-boggling. With 100 kg of soaked fruits—a mix of raisins, currants, sultanas, and candied peels—combined with large amounts of rum for soaking and flavor, the task quickly becomes one of logistics as much as baking. The soaked fruits were allowed to sit for days before baking, allowing them to absorb the rich rum and mixed spices, infusing them with the deep, festive flavors that would form the foundation of the cake.

The first step in this lengthy process is soaking the fruits in rum. The students were responsible for preparing the fruit mixture several days in advance, ensuring that the fruits were evenly coated and had enough time to soak up the rum and spices. This part of the process is largely passive but essential for achieving the cake's signature flavor.

2. Preparing the Batter:

Next came the preparation of the cake batter. Students divided into teams, each responsible for a different aspect of the preparation. Some worked on creaming butter and sugar (the base for any good cake), while others carefully measured out the flour, baking powder, and spices. Mixing the ingredients required precision to ensure that the batter was the right consistency and that the fruits were evenly distributed throughout.

3. Mixing and Folding:

Once the batter and fruit were ready, the real magic happened. With careful folding, the soaked fruits were gently incorporated into the batter, ensuring every bite of cake would be packed with flavor. The students had to work quickly, but carefully, ensuring that the air was kept in the batter for a light yet rich texture.

4. Baking in Shifts:

Given the sheer volume of the batter, it was necessary to bake the cakes in batches. The industrial ovens were preheated to the right temperature, and the students took turns monitoring the baking times, carefully rotating pans for even cooking. Each batch of cakes was checked for doneness by inserting a skewer in the center—an essential task to ensure that the cakes were baked through but not overcooked.

5. Cooling and Storing:

After baking, the cakes were placed on cooling racks, where they were carefully monitored to prevent any moisture from accumulating. Once cooled, the cakes were wrapped in parchment paper and aluminum foil to lock in their moisture and flavor. Some cakes were even "fed" with additional rum during this process, a step that many believe enhances the cake’s flavor and keeps it moist for weeks.

The Result: A Cake Fit for a Holiday Feast

After days of hard work, countless hours of collaboration, and the careful blending of ingredients, the team of students managed to create a 1,000- Christmas plum cakes that was nothing short of spectacular.

The decorated Cakes were nicely packed as a gift hamper consisting of a bottle of non alcoholic wine, two glasses, candies, marzipan fruits and the box was a delight to see. 1000 boxes were then delivered to the who is who of the Hyderabad Hospitality industry, Media, Friends, Well Wishers and prominent personalities. It is an yearly affair which keeps getting bigger and better everytime.
