The time passes by so does the day, the week, the month & the year – It’s time to get ready & welcome the New Year (2018) & say Bye Bye to 2017 with Joy & happiness. We at Culinary Academy Of India have a tradition of baking plum cakes & gift to our well-wishers at the end of calendar year, but this time we made it something special. Our cake box this time has our traditional Xmas Cake, Millet cake & Red velvet cake individually baked in big muffin cups each weighing and elegantly decorated like cup cakes. The idea is to give surprise our well wishers with a traditional, healthy & joyful treat this year. The process of making the Xmas cake involves making & baking a moist batter using ingredients like Fat, Sugar, Eggs, Flour and the alcohol soaked dry fruits and nuts (raisins, almonds, cashewnuts, black currants, tuty fruity, candied ginger & orange, sultanas, glazed cherries) which are flavored with spices like Cinnamon, Cardamom, cloves, star anise, ginger powder. The Millet cup cake is a healthy treat made of fat, icing sugar, eggs & millet flour whereas the Red velvet cake is a rich treat made of butter, eggs, yoghurt, cocoa powder, sugar & beet root juice. Around 700 of these individual cup cakes each weighing 150gms were prepared & elegantly decorated with toppings like fondant, sugar paste flowers, leaves, edible joy sticks & with few new year decorations which have been placed into a lavishly looking gift hamper box which also included a bottle of wine & season’s greetings letter duly signed by the director. These neatly packed hampers get distributed amongst the hoteliers, Hotel management institutes, well wishers and supporters of the academy within the city parameters. The budding chefs, faculty & other team members of CAI collectively make this cake making process practically possible to deliver our warm wishes of New year on time & denote our gratitude towards the proud members of the culinary Industry.
