As part of the prescribed curriculum for the third semester BCT&CA students are expected to create an ambience apart from demonstrating cooking skills. The evaluation process helps in bringing in creativity, team building and exposes ones leadership abilities. Goan Cuisine was one of the challenges given to the students. The entire team of second years worked day in and night to create a out of the box theme set up which mesmerized the guests. The otherwise sober looking training restaurant had a beach with live DJ playing the music. Students were dressed in the local cool Goan attire with traditional Goan food as a spread. Prawn Balchao,Vindaloo, Galina Xacuti with the classical Goan fish curry and Rice were part of the menu. It was an effort worth appreciating and a memory to cherish.
Some of the dishes prepared were : Veg Xacutti, Mutton Vindaloo, Chicken Cafreal, Pav, Goni Masoor Dal Tadka, Goan White Pulao, Rawa Karwar, Mushroom & Potato Cutlets, Coconut Serradura.
