INETRANATIONAL WORKSHOP ON THREE DIMENSIONAL INEDIBLE SCLUPTURES BY CHEF MARK CROCKET- 2016

The students of the Culinary Academy of India were part of a three day workshop by a renowned International Garde Manger Chef, Chef Mark Crocker. Chef Mark Crocker is currently the Corporate Chef at the Rain Tree Hotels in Chennai, Tamil Nadu. The workshop was conducted on the 3rd, 4th, and 5th of March and was attended by the BCT&CA Final Years and PGDCA students. The workshop focused on demonstrating inedible sculptures to the students in which the primary focus was thermocol. The three day workshop showcased the intensive artistic work done by Chef Mark Crocker on thermocol. The first day focused on carving which included birds which were placed in its natural habitat being trees and water being represented as waves. The carvings included swans, peacocks and a crane. The next day was based on an aquatic theme, which comprised of the following aquatic creatures being a seahorse, flat fish, gold fish, oyster and a gastropod shell. The final day being the finale had involved creating advanced sculptures in particular a dragon, a reindeer, and a few flowers such as roses. The students of CAI gained immense amount of knowledge pertaining to 3 dimensional thermocol carving which was passed on in a creative and beautiful manner by Chef Mark, which will help them further during the progression of the year.
